Paleo Rotisserie Chicken

Finger Lickin' Good!
Here is a great, easy recipe for us working moms.  This goes in the crockpot and if you get the seasonings ready the night before the process will go even quicker.  The meat will literally fall off the bone.  The first time we made this Jesse tried taking it out of the crockpot by the leg and it tore right off.  I ended up having to get the tongs and inserting them into the middle cavity to get it out.  I tried the same trick last night when we had it and the whole top of the chicken came off.  Juicy and wonderful!  Finger lickin' good to be exact!
 
1. Begin with an all-natural, whole chicken.
 

2. Rinse chicken off and remove the package of "surprises" from the inside cavity.


3. Mix the following spices together:
  • 3 tsp sea salt
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp onion powder
  • 1 tsp thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper

 

4. Quarter an onion and place at the bottom of the crockpot.
 
    

  5. Rub the seasoning mix all over the chicken.  Be sure to get the bottom and inbetween the legs and wings.  I even sprinkle some inside.  Place the chicken on top of the onions.  You don't need to add any liquid, the chicken will produce its own.
 
  
6.  Cook on low for 8 hours.  The meat will literally fall off of the bone.  Here are the pictures from our dinner.  It fell apart just taking it out of the crockpot.  And plenty left over for lunch the next day!
